Farm News

Hurrah for the rain! Although a wet weekend might not be high on everyone's wish list, your farm (and farmers) are very happy with the arrival of needed moisture. Things were getting, let's say, a bit dusty. And when that happens, rain is a much better solution than running the irrigation system days on end.

The crops are still looking really great - over the winter we decided on some field management changes, which we think are making a substantial difference. It shows that you're never too old to learn (and that it pays to open yourself up to new ideas).

Over the last week, we've had some questions about CSA share logistics - vacations, federal holidays, etc., as well as our growing practices. More about both topics further in this newsletter.

In this newsletter you'll also find a recipe for a Thai vegetable curry, a first installment of our 'explore Schoharie' series, what's in this week's share (and U-pick update), and a listing of our on-farm events.

Pac choi is another member of the brassica (mustard) family. It's a very quick growing cabbage-like vegetable, back in your share this week. We grow it under so-called row cover to protect it from flea beetles. It goes nice in with a stir fry, Pad thai, or with the curry recipe featured below (shared by Jennie Mosher).

Recipe: Thai Vegetable Curry 

Ingredients:
1 onion, sliced
1 Tbsp grated/minced ginger
2-3 cloves garlic, minced
1/4 tsp turmeric
1/4 c vegetable stock
1 red bell pepper, seeded & cut in strips
1 head pac choi, chopped (stalk pieces about 1/2" )
1 small head broccoli, cut in about 1" pieces
(I use whatever vegetables I have handy - this is good with zucchini, snow peas, green beans, or whatever you have)
You can use some hot pepper if you like
1 8-oz can diced pineapple in juice (unsweetened)
1-1/2 to 2 tsp curry powder
1/2 c or more coconut milk
2 Tbsp minced fresh basil (if available)
1 tsp soy sauce
Chopped peanuts, lime wedges, and chopped cilantro for garnish (optional) 

Directions:

  1. Put a little vegetable stock in a large pot or wok. Add most of onion and all of ginger, garlic, and turmeric.
  2. Sauté till they start to soften, then add pepper, saute another minute or so, then the other vegetable stock if necessary.
  3. When the vegetables start to soften, add pineapple with juices, stirring to combine. Cook a little more, until the vegetabes are tender-crunchy.
  4. Remove from heat.
  5. Stir curry powder into coconut milk, add to vegetables. Wait 30 seconds, add basil & soy sauce.
  6. Serve with garnishes over rice, quinoa, or noodles.

We are planning an exciting children oriented tour at the farm on July 7. Come and see how we grow your vegetables, meet our farm animals, and enjoy your fresh picked salad and bonfire roasted hot-dog lunch. 

We really need to know how many people are planning on coming, as this is a pretty big production for us. Let us know by June 30 (email link below).

In this week's share, U-pick update

This week, every full share will receive spinach, mesclun, pac choi, lettuce, diakon or regular radish. We are rotating summer squash, broccoli, and kale. 

U-Pick update: We're still on hold - but rest assured your patience will be rewarded! You'll be the first to know when the U-pick is open!

CSA deliveries, vacations, and Federal Holidays ...

Over the last years, we've grown accustomed to make adjustments to our Monday, Tuesday, Thursday CSA delivery schedule to avoid overlap with Federal holidays.

For example, Labor Day is on a Monday, so our Monday deliveries for that week will move to Tuesday, the Tuesday deliveries to Wednesday, and the Thursday delivery stays on Thursday. We'll make announcements for such changes well in advance in this newsletter.

As Independence day (July 4th) this year falls on a Wednesday, we will not make changes to our delivery schedule for that week. If you or your family has travel plans, you can always send someone in your place to pick up your share!

Fox Creek Farm growing practices

Last week some people were asking us about our growing practices. From our start in 2004, we've adhered to organic growing. As almost all our produce finds a home through direct marketing (by way of the CSA), we've not seen the need to go 'certified organic'. We believe that knowing the farmer who grows your food is a much better warranty than a USDA stamp on a box or certificate!

And if you have any questions or concerns you would like to discuss with us about our farming methods, we're just a phone call or email away.

Visit your farm ... and hike Vroman's Nose

We encourage you to come out to your farm - it's a beautiful place to visit. And while you're out here, consider exploring Western Schoharie County. The 30 minute hike up to the top of Vroman's nose near Middleburgh will give you views over the Schoharie Valley to remember - and it's just a 20 minute drive to the trail head from the farm.

Directions: Take Rt. 146 to Gallupville, make a right on Rt. 443. Go west on Rt 30 through Middleburgh. After crossing the Schoharie Creek, the first road off Rt. 30 on your right leads to the trail head parking.
