Extend the season with a winter share!
Sometime around the middle of last week it must have happened: the foliage turned from mostly green to vibrant reds and yellows. It really is a treat that comes with living in upstate New York to witness nature's fireworks, and this year it appears to be more spectacular then usual. It makes for a nice backdrop for our continued fall harvests.
Our work meetings are now about figuring the best strategy to get the crops in: do we harvest the sweet potato's first, or should we focus on the parsnips? When are we going to finish the potatoes? And where do we squeeze in next week's carrot harvest? Top that with the uncertainty of the weather, and you can probably imagine that we're still in high gear!
There are still beautiful crops out in the fields, and as planned, the regular 2022 CSA season will go through the last week of October (with Friday, October 28 being the last delivery day). We've been so lucky to have gone this far in the season, even with the drought like episode in July and August: the fall growing season has been really nice, with ample rain and no frost (yet). Not too bad for early October in Schoharie!
We are getting ready for a short and sweet end-of-season CSA share renewal campaign - as promised, more information about that a little further in this newsletter.
Enjoy this week's harvest,
Raymond and Sara
Expected harvest & U-pick update
In this week's share, expect Red Maria potatoes, Leeks, Cabbage, Onions, Garlic, Spinach, Beets (with tops), and Lettuce.
We are rotating pumpkins or winter squash (medium shares only), Cauliflower, and the last of the peppers.
U-Pick: Lots of herbs, and a few flowers. The garden did really well this season, and we appreciate your visits, but at this point in the season the U-pick is positively over it's peak. We'll do it again next year!
Recipe: Potato Leek Soup
What about a French classic soup, with almost all ingredients from your Fox Creek Farm CSA share? (Serves 6)
3 tablespoons unsalted butter
3 large leeks, white and light green parts only, roughly chopped (about 5 cups)
3 cloves garlic, peeled and smashed
2 pounds Yukon Gold potatoes, peeled and roughly chopped into ½-inch pieces
7 cups chicken or vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup heavy cream
Chives, finely chopped, for serving (optional)
Melt the butter over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes. Adjust the heat as necessary so as not to brown.
Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.
Remove the thyme sprig and bay leaves, then purée the soup with a hand-held immersion blender until smooth. Add the heavy cream and bring to a simmer. Taste and adjust seasoning with salt and pepper. If soup is too thin, simmer until thickened. If it's too thick, add water or stock to thin it out. Garnish with fresh herbs if desired.
Coming soon: our 2023 early sign-up campaign
As always, we hope you'll renew your CSA share for the 2023 growing season: there's something to say for eating exceptional produce grown produce from your favorite farm. Our sign-up campaign starts Monday, October 17, and runs through the 28th. During that time, we offer you the opportunity to reserve your share at the best price we'll offer for the 2023 season.
It will be very likely that we will have to increase the 2023 share prices between October '22 and the start of the harvest season: the global economic uncertainty surely has it's impact on this farm business, too. Your early sign-up deposit does at least two things: it guarantees you another season of wonderful produce, and locks in the share price.
We hope you'll help us make our early sign up campaign a great success!
As a reminder, we will return to pick-up sites for our CSA shares next season. We are still working to reach agreement on some sites, but the list below is what we got for 2023 right now:
Schoharie/Gallupville: Fox Creek Farm
Albany: Honest Weight Food Co-op
Delmar: Delmar Reformed Church
Guilderland: Foundry Road
Altamont: Altamont Reformed Church
Schenectady/Niskayuna: Grand Boulevard
Clifton Park: Christ Community Reformed Church
And workplace sites:
Rotterdam: DEC Region 4 headquarters
Albany: DEC Central Office, Broadway
The winter greens are growing!
Our first high-tunnel is greening up nicely for the winter CSA! For the first time we are offering an 8-week Winter Share - from October 31 to December 20th, for pick-up at the farm only. The winter share will be a mix of fresh spinach, salad mixes and other greens grown in our tunnels, along with stored crops like carrots, beets, and some newbies like fennel. Shares will be pre-packed, with somewhat flexible pick-up times.
The share size will be between a Medium and a Full share, with ample greens and about 3 non-green (read: storage crop) items per week.
This is for pick-up at the farm, only: No deliveries!
Pick-up times are Monday 4:00 PM to 8:00 PM, or Tuesday 8:00 AM to 8:00 PM
We do plow the snow, but in case of a major snow storm, we might not have the road open at 8:00 AM (in which case you probably don't want to be on the road, anyways). We don't salt the road, but if needed will sand.
Extend your season of exceptional produce from Fox Creek Farm! The sign-up link is on the homepage of our website, see link below:
