Farm News

After today's very long harvest for the CSA share, the farm news is going to be pretty brief. The crops are coming in really nice, to the point that it's a challenge to fit all on the delivery truck. A very good time to be a Fox Creek Farm CSA member!

Recipe: Zucchini Gazpacho

Kelly Beers brought this zucchini gazpacho recipe to our attention. A simple summer soup (adapted from www.framedcooks.com).

3 cups sliced zucchini (no need to cook or peel it)
2 cups sliced cucumber
3 scallions, roughly chopped (reserve a little extra for garnish!)
1/2 cup basil leaves
1/2 cup olive oil
1/2 cup ice cubes
1/2 cup sour cream
Salt and pepper to taste

Put all ingredients except salt and pepper into a blender. Puree until smooth, adding extra ice cubes if you like the soup a little thinner and colder. Season to taste with salt and pepper. Ladle into bowls and garnish with basil leaves, a little chopped scallion, a small spoonful of sour cream and/or a drizzle of olive oil. (serves 4)

SUNY Albany site: Fall semester CSA shares available & August 20 intersession pick-up time change

As we still have some CSA shares available, we're trying to cater to SUNY Albany students and faculty returning after the summer break with the SUNY Fall semester CSA share. Please help spread the word - more information about this share is now available on our website, https://www.foxcreekfarmcsa.com/

SUNY Albany site: August 20 intersession pick-up time change

In the week from August 18 to August 26, the Science Library will be in intersession. As a consequence, the doors to the library will close at 6:00 PM. That means that our CSA pick-up for Monday August 20 for the SUNY library location only will end at 5:45 PM, so we can clean up in time before closing. We appreciate your understanding!

In this week's share

In every CSA share this week: beets, summer squash, and garlic. We are rotating kale, new potatoes, cucumbers, eggplant, peppers, tomatoes, watermelon, sweet corn, green beans, cilantro, basil, and parsley. 

U-Pick update: 

Cherry tomatoes are here, lots of them! Please keep in mind that other CSA members may also to share in the U-pick bounty. But please feel free to come and sample!

Ground cherries are starting to come in -- the ones in the yellow husks are ripe. Also some pole beans are getting ready to pick.

Flowers and herbs -- lots of them! Oregano, thyme, chives, parsley, basil, leaf fennel, summer savory, sage, marjoram, chamomile, cilantro, dill, lemon grass and a wide selection of hot peppers.

Upcoming farm events:

We've set the date for the garlic work party. Saturday, September 1st it is. We'll start at 10:00, and stop at the potluck lunch at 12:30, as the garlic is already clipped. We will barter garlic for your help -- this is mostly a sit-down hands-on event, in the barn, in the shade! 
 
And on Friday, September 21: Farm potluck dinner (evening). More details to follow.
