Farm News

We survived the heat - getting out in the fields real early did the trick. But how nice it is to work in somewhat more seasonal weather!

Needless to say, the short heat wave did some trickery to our harvest schedule. The spinach bolted, making a second harvest of the crop impossible. And as to be expected, some lettuce got away from us too. But on the positive side, cucumbers, peas, and summer squash are quite abundant - and we almost could see the corn grow.

And although the share this week is a bit different from what we were planning this winter, we think you'll be pleasantly surprised. For one reason or the other, this growing season is shaping up very nicely, so far.

The U-pick garden is looking beautiful - by itself worth the trip out to the farm. Or wait until Saturday 7/21, to come and give us a hand with the garlic harvest!

Recipe: Kale Ceasar Salad

Terry Tamer brought this recipe to our attention - it's originally from America's Test Kitchen. The trick is in the low-temperature blanching of the kale.


Kale, 1 medium bunch
3 tbsp. mayonnaise
 tbsp. plain yogurt
1 tbsp. lemon juice
2 tsp. white wine vinegar
2 tbsp. olive oil, divided
1 tsp. dijon mustard
2 tsp. worchestershire sauce
1/2 tsp. salt
1/2 tsp. pepper
1 garlic clove, minced
1/2 cup grated parmesan, divided
3 filets anchovies, rinsed and chopped up
3 oz. whole wheat bread

1.      Cut up bread into half inch cubes and put in a bowl.
2.      Add 1 tbsp. olive oil plus 1/8 tsp. each salt and freshly ground black pepper and mix to coat.
3.      Spread on a baking sheet and place in a 350 degree oven for 15 minutes.
4.      Meanwhile, cut up kale into one-inch pieces, cutting out and removing large center ribs.
5.      Put kale in a large bowl and cover with warm water (110 to 115 degrees) for 10 minutes.
6.      Meanwhile, make dressing in a large mixing bowl.  Place mayonnaise, plain yogurt, lemon juice, white wine vinegar 1 tbsp. olive oil, dijon mustard, worchestershire sauce, garlic, 1/4 cup grated parmesan and minced anchovies and mix thoroughly.  Add and mix in second tablespoon of olive oil. 
7.      After the ten minutes, lift kale out of the water and put in salad spinner.  (Do not pour directly into the spinner to avoid grit.)  Work in batches as there may be too much for one time.  Dry any of the kale that may still be wet with paper towels and place in the large bowl with dressing.  
8.      Mix kale with the dressing and place in the refrigerator anywhere between 20 minutes up to six hours.
9.      Before serving, mix in another 1/4 cup grated parmesan cheese and half of the croutons. 
10.   When serving, garnish with the remaining croutons. 

And a note on Napa Cabbage

Napa cabbage is another member of the brassica family. It's very versatile. Use it's leafs for cabbage rolls, add it to soups, kimchee, use it in a stir-fry, or add it raw to a salad!

Fox Creek Farm Winter Storage Share

Believe it or not, last week we planted the carrots and beets that will be part of our winter storage share. This optional share, with also onions, garlic, cabbage, potatoes, and winter squash, will be delivered the week after the last regular CSA share. With some common sense storage, this bushel of produce will keep easily until Thanksgiving!

Garlic Harvest Party, Saturday, July 21

We'll be harvesting our 2018 garlic crop on Saturday, July 21. We'll start at 9:00 AM in the field, to get about 20,000 heads of garlic out of the ground. We'll be moving to the barn around lunch time to start tying and hanging bunches - garlic has to cure for about one month. 

As always, we'll have an excellent potluck lunch (bring a dish to share and your favorite beverage). The farm will have coffee for the mid-morning break (and bagels).

Come for a the day, or for a couple of hours. This hands-on event is fun for everyone! And we'll barter garlic for your help.

In this week's share, U-pick update

This week, every full share will receive peas, garlic scapes, tatsoi, summer squash and cucumbers. We'll be rotating kale, chard, Napa cabbage, broccoli, parsley and basil, arugula, eggplant and peppers. 

U-Pick update: The U-pick is open. Currently ready for harvest is a nice selection of herbs: Oregano, thyme, chives, parsley, basil, leaf fennel, and summer savory. New additions for this week are sage, marjoram, and chamomile. And some flowers are ready for harvest, too.

As a reminder, we just ask you to 'cut to come again', i.e. to take a branch and not the whole plant (so it can regrow), and to harvest with the consideration that the U-pick is shared with all the other CSA members.

Your farmers are here to help

Saturday evening we took the opportunity for a nice drive on the farm and in the woods with Tex, our Percheron. The setting sun made our farm look so beautiful - something we would have never accomplished without the strong support of our CSA membership. Thank you!
