Don't can in your Instapot! Several phone calls come to our attention asking about using an electric pressure cooker (i.e. Instapot) in place of a pressure canner. Even though many companies say their product is suitable for canning, research shows that the electric pressure cookers may not destroy the botulism bacteria. Please read more about the studies.
